What happens when it rains during your picnic?
You take it inside and make the best of it!
This month we were fortunate to provide a healthy picnic event with the Goodwill Lifeworks Clients and Staff. Featured was a delish lunch provided by our SNAP-Ed Coordinator Rachael Reynolds including yummy wraps, fruit slaw, and pasta salad! During the delicious healthy picnic lunch, clients and staff were provided a food demonstration by our Nutrition Educator Courtney Roderick in partnership with Harvard Pilgrim Healthcare’s Healthy Food Fund. Clients and staff were able to try a tasty peach salsa and tomato salad! (Recipes are below) Below you can see participants raising their hands to try the samples.
And last but not least we had a wonderful demonstration provided by our Let’s Go! Coordinator Nan Bell on hidden sugars in drinks! She was also excited to provide the healthy picnic with yummy fruit and veggie flavored water to sip on.
We were also really excited to be able to provide the clients and staff with locally grown veggies to take home with them. These potatoes and cucumbers shown below were harvested that morning (it doesn’t get any fresher than that) from the Kennebec Restorative Community Harvest! This was made possible by our gleaning project in partnership with Harvard Pilgrim Healthcare and the Kennebec County Correctional Facility to glean after season produce that would’ve been left behind so we can reduce food waste and increase access to locally grown fresh produce!
Even though weather didn’t go as planned, we didn’t let it get us down! Our healthy picnic event was just as fun and was still filled with delicious healthy goodies that make picnics not only fun but nutritious. We encourage you to try these recipes (picnic or not)!
